An honest appreciation of the natural world and its provisions, and a long-held love for the harvest seasons, fuels his endless experimentation, and focus on excellence and innovation.

Guillermo’s passion to provide for people began in his native Argentina, where his youth was spent helping in the family orchard and learning from his Mother in the kitchen. As his devotion to food developed, Guillermo studied in Europe before travelling the world embracing new techniques and finding balance in flavours unique to different environments.

Guillermo’s creations are a reflection of his beginnings, his culture, his experiences, his family and his friends.
